Made from the Honeycrisp apple, a prized Northern USA apple variety. Juice is cold concentrated naturally in the winter weather before fermentation. Slow, cold ferment, arrested to leave just the right balance of sweetness and acidity. Matured for 17 months in stainless steel tanks to allow the flavours to integrate and mellow. Perfect with cheese, maple creme brulee or butter cookies.
