100% Pedro Ximenez matured for 6 months on lees. Behind the Estones project there are two passionate, curious people with extensive experience: sommelier Sergi Montalà and winemaker Salvi Moliner. Estones was born in 2008 in order to produce quality wines in a sustainable and respectful manner with the environment. The winery works closely with the appellations Montsant –the area surrounding Priorat- and Terra Alta. First dry white wine ever made with 100% fresh Pedro Ximenez grapes, historically raisined to produce sweet, dark wines. Maceration and fermentation in stainless steel for 36 days, followed by 6 months on lees. On the nose peach, apricots and grape with a background of honey and balsamics. Smooth and velvety on the palate. Fresh with good acidity. Fruity flavors are mixing with the creamy. Complex, long and persistent. Salted after taste and freshness. Pairs well with pasta, fruity salads, smoked fish, soft meats.
