The fruit are taken from their ‘standard’ trees which are planted in a way that allows each tree to remain in harmony with its surroundings and encourage its own micro biodiversity. A pale golden colour, this lightly sparkling quince immediately appeals to the eye. The real surprise comes when the drink is nosed. This meadow orchard quince is beautifully aromatic, with notes of dill and aniseed, that is both intriguing and utterly compelling. It’s off-dry on the palate with wonderful light flowery, herby aromatic flavours coming through that never dominate. It’s balanced by gentle acidity and finishes long, indicating its outstanding quality. Take a plate of smoked salmon, the best available, the gentle dill notes of the quince caressing around the palate, intermingling with the smoky saltiness of the salmon.
