100% Viognier (20% fermented in 3rd fill French oak barrels). After 9 months the different Viogniers were blended and ready to undergo the 2nd fermentation in bottle. 34 months ageing in bottle before disgorgement. With a boutique farm of 62 hectares and natural, cherished fynbos, this winery was first bought as a fruit farm and transformed into vineyards in 1997. This unique, bottle fermented, Viognier Methode Cap Classique offers elegant notes of fresh citrus rind and biscotti which are complemented by a rich, creamy midpalate and delicately fine mousse. Perfect with fresh oysters, sushi, white fish, on its own. It can be cellared for up to 8 years.
