It undergoes a second fermentation in the bottle and sits on its lees for 12-24 months. Bright, fresh, yet delcate, crisp English apple flavours that you’d expect from a well-crafted cider. It also comes with an elegant mousse to match with the yeasty, bready, biscuity and buttery notes from long ageing in the bottle on the yeast lees. Many might describe this cider as apple champagne.
